One of my favorite appetizers (or snack or dinner…) is a simple recipe that I’ve really come to rely on, Bruschetta. This version is so quick and easy that it will have you filled and satisfied within minutes.
When I want to dress it up, I’ll warm up a fresh baguette with a light spread of butter and shaving of Parmesan.
Warning….this may make it on to your dinner table at least once a week.
2 Roma tomatoes, finely diced
1/2 red onion, finely diced
handful of basil leaves, finely chopped
sprinkling of sea salt, pepper, shredded Parmesan and a drizzle of olive oil and balsamic vinegar
